Today, we are talking about a tool that completely redefines how we enjoy our favorite bottles: the Coravin Wine Preservation System.
The Dilemma
There is a classic dilemma that every wine lover faces. You come home after a long day, step out onto the lanai to enjoy the warm breeze, and think, “A nice glass of wine sounds absolutely perfect right now.”But then you look at the bottle. If you open it, the clock starts ticking. Oxygen rushes into the bottle, and suddenly you are committed to finishing that bottle over the next night or two before it loses its luster.
For those moments when you truly want just a single glass and know you won’t have the time to finish the bottle before it goes south, or when you want to just sample a precious, highly allocated bottle without without finishing it, the Coravin is an absolute game-changer.
How the Magic Happens
By inserting a microscopic, medical-grade needle right through the cork and replacing the extracted wine with pure argon gas, the Coravin allows you to pour a glass while leaving the remaining wine perfectly sealed and protected from oxidation. The cork naturally reseals itself, and the bottle can happily return to your collection for weeks, months, or even years.
Note that this obviously doesn’t help if your wine has a screw top, or one of the plastic corks. Our experience has been that it works best with real cork – and that the cork should be at room temperature or close.

My Coravin Confession
I have to let you in on a little secret: I wasn’t always a believer. Many years ago, my Partner in Wine wrapped up a brand-new Coravin and placed it under the Christmas tree for me. When I tore away the wrapping paper and realized what it was, I burst out laughing.
“What on earth do we need this for?” I teased him. “Wine never stays around long enough in this house to need preserving!”
Convinced it would just sit in a drawer gathering dust, we actually ended up returning it. Fast forward a few years, a few more special bottles in our collection, and an evolution in how we like to taste, and we humbly repurchased one.
Our Coravin – A “winesaver” when you only want one glass
Today? We are incredibly glad we did. While it’s not an everyday necessity, it is the ultimate tool for occasional, mindful indulgence.
The “Just One Glass” Solution
We experienced the true treasure of this tool just recently. We were in the middle of packing our bags, preparing the house, and getting ready to head out of town for our niece’s graduation. The pre-trip excitement was high, the packing was mainly finished, and we wanted a small moment to relax and toast to the upcoming family celebration.
We both craved just a single glass of a delightful white wine we had recently procured during a fantastic tasting over at Devine’s.
In the past, opening a fresh bottle of premium white right before leaving town for a few days would have been out of the question. It would have meant wasting the majority of a gorgeous bottle.
Now, let’s be entirely honest with each other here: we don’t waste wine around here! Before the Coravin, our logic would have dictated that we simply force ourselves to each have a second (or third) glass to finish it off, regardless of early morning flights the next day 😜.
Instead, we whipped out the Coravin, pressed the trigger, and poured two perfect glasses. The bottle went right back into the fridge, completely untouched by oxygen, waiting safely for our return. No forcing an extra glass, no guilt, and absolutely zero wasted wine.
You can see that, when we finally pulled the cork on that wine, there is no evidence of that tiny Coravin needle ever having penetrated the cork! That’s the magic and how the wine stays in perfect condition even after using the Coravin.
